This is an authentic Dongbei veggie dish, with ad unsurpassed flavor. This dish combines stir-fried potato, eggplant and green peppers, it can be eaten with a bowl of with rice.

Potatoes 2 | Eggplant 1 |
Green pepper 1 | Scallion 3 stalks |
Ginger to taste | Garlic 2 cloves |
Salt | Soy sauce 2 tbs |
Sugar 1 and a half tbs | Starch 1 tbs |
Oil fo frying 2 cups | Water ½ cup |
- Wash and peel potatoes and eggplants, than chop onion, ginger and garlic.
- Cut eggplant, potatoes and peppers in cubes (preferably the same size).
3 Heat oil in wok till hot then put in potatoes and fry till light golden brown. Remove and drain on kitchen paper to remove excess oil.
- Fry the eggplant in the same oil, until it becomes golden and soft. Remove and drain on kitchen paper to remove excess oil.
- Fry the green pepper briefly for about 1 – 2 minutes on high heat. Remove and drain on kitchen paper to remove excess oil.
6. Leave a tablespoon of oil in the wok, add scallion, garlic, ginger, add soy sauce, sugar, salt, a little starch and water. When the sauce is boiling add all the vegetables, mix and serve.
